Chef Massimo Callovini

Massimo Callovini is a world-renowned chef with over 25 years experience. Massimo studied at Villa Alba on the picaresque Garda Lake in northern Italy.
He honed his exemplary skills working in various fine-dining restaurants in Northern Italy, including his hometowns of Trento and Bolzano.
Upon the invitations from a close culinary colleague he emigrated to Toronto where he demonstrated his skills at Pal’s Restaurant in Yorkville then onto the famed
Vittorio’s Osteria on Yonge(Toronto)-Cibo Ristorante. Cibo was frequented by numerous Hollywood celebrities including Jane Fonda, Bob Dylan, Raymond Burr,
Lisa Minneli, Sting, Pierce Brosnan and Frank Zappa to a name a few. To this day it is fondly spoken about and remembered as the hottest restaurant in Toronto back in
the 1980’s. In 1989 he opened the trendy Bocca Ristorante on St. Clair Avenue West, which was one of the first fusion restaurants in Toronto combining mixed menus
Italian ad Thai cuisines.  

Joanne Kates stated that Bocca was the future of restaurants with three separate kitchens creating haute cuisine. When Cibo closed in the early 1990’s Massimo worked as a 
private chef for Robert Shad (Husky Injection Molding Systems Ltd.) In early 2000 he returned to Italy and opened Che C’e C’e in a piccolo paese in the
Dolomite Mountains where he specialized in pesce. Then he returned to Toronto in 2007 and has been working at 17a Yorkville Avenue
first under the name Imperia Ristorante and for the past several years at Blu Ristorante.
